🌸 Why "Banksia Tree"?
Banksias are about as Australian as it gets — tough, spiky, unmistakable, and one of the first plants Europeans ever collected on this coastline. They were named after botanist Sir Joseph Banks.
Long before that, First Nations Australians already knew the banksia well — soaking its nectar-rich flower spikes in water to make a naturally sweet drink, centuries before "locally sourced" was ever a phrase on a café menu.
Port Adelaide sits on the Country of the Kaurna people, the Traditional Custodians of the Adelaide Plains. Where you're standing was once part of a much wider, wilder landscape — tidal creeks, reed beds, birdlife, and a river system that sustained Kaurna people for tens of thousands of years.
So as you sip, take a second to imagine it: no buildings, no streets — just mangroves, water, and Country that had already been cared for and lived on for a very long time.
